Cheese of the Month for March: Farmer's Cheese

Crafted by Silver Lewis Cheese Coop, Monticello, WI

Farmerís Cheese is unique in that there are no nationwide standards for its production as it was traditionally made with whatever cultures the individual cheesemaker had at hand. The flavor of Wisconsin Farmerís Cheese will vary among cheesemakers, but generally has a buttery, slightly acidic flavor and a smooth, supple texture.

Farmerís Cheese pairs well with almonds, grapes and plums, as well as seafood, poultry and fruity wines. It works well in potato dishes, casseroles, and macaroni and cheese; sliced for sandwiches; or cubed for snacks. Chill the cheese well to facilitate slicing, but serve at room temperature to allow the flavor to develop.
