Josh and Carla Erickson hand craft their extensive line of cheese in an historic cheese factory built in 1897, and use milk from surrounding farms that are still in the families of the original farmers of the area.

Silver Lewis Cheese Coop is located east of Monticello in southern Wisconsin. A visit to the cheese factory is both a step into the past and a look at the future of cheesemaking in the state.
